Sushi is a vinegared rice dish with variety of toppings in a seaweed sheet. You would be surprised to see its possibilities in the vegetarian spectrum! These are some of the variants of sushi I have tried over time.
Kappa Maki
Kappamaki, the basic variant of Norimaki sushi, is made with cucumber. Its best paired with wasabi and soy sauce.

Mamenori Maki
Avocado, cream cheese and cucumber filled maki rolled in a mamenori sheet. Tasted good with soy sauce and pickled ginger.

Mozzarella Tempura Maki
Tempura fried, mozzarella cheese filled maki.

Blue Forest Uramaki
Uramaki is the inside out variant of maki without the nori sheet. With an edamame, water chestnut and carrot based filling rolled in black rice with a hint of truffle oil, it was great!

Seaweed Gunkan
Gunkan is a variant of sushi which is oval shaped to look like a battleship. Topped with wakame, it tasted bad.

Cheese Gimbap
Gimbap, a Korean style sushi made with sesame oil seasoned bap, filled with cheese & vegetables and rolled in a gim seaweed sheet.
